Birch Highball

Birch lengthened with chilled soda water and a sprig of thyme.

Gather

Fierfield Birch Whiskey

Chilled soda water

Thyme

Highball glass

Cubed ice

Method

Simply add 50ml of the whiskey to a highball filled with large cubes of ice. Top with chilled soda (we like Fever Tree) and garnish with a sprig of thyme or a local green herb or fruit.

Magic

This works perfectly with any green herb. It’s a clean, dry and complex serve with really simple ingredients!

Barberry Sour

A whiskey sour, shaken with lemon, frothy egg white and served with a twist.

Gather

Fierfield Barberry

Lemon

Sugar syrup

1 egg

Shaker

Hawthorne and fine strainer

Rocks glass

Cubed ice

Orange

Method

Add 50ml of whiskey, 25ml freshly squeezed lemon juice, 15ml sugar syrup and 1 egg white to a shaker. Shake without ice to emulsify, then shake with ice and double strain over fresh ice in a rocks glass. Garnish with an orange wedge or a sprig of rosemary.

Magic

Omit the egg white for a zippier aperitif style serve, or use a local honey to give a richer, deeper take.

Birch Fizz

Birch lengthened with bubbles and accented with citrus and tarragon.

Gather

Fierfield Birch Whiskey

Chilled Champagne or classic method bubbles

Method

Chill down your flutes, Fierfield and Champagne, and simply add 30ml Birch to a glass, and top with bubbles. Garnish with a twist of lemon and a sprig of tarragon.

Magic

A simple, elegant aperitif, this is great with accent flavours of your favourite herbs and fruits.

Method

Add 30ml of whiskey, 25ml Cocchi Rosa, 15ml Campari to a mixing glass. Stir with ice and  strain into a chilled cocktail glass. Garnish with a slice of cucumber.

Magic

A richer take on a Negroni with a profile that highlights the complexity of the whiskey, but use your fave vermouth or bitters to pull it towards your ideal style.
