What is Botanical Irish Whiskey?

Fierfield is a modern take on the traditional process of infusing whiskey – whiskey was always drunk mixed. We take ingredients that reflect the flavours in the whiskies, and carefully craft these into delicate accents to create a harmonious blend. It is not a whiskey liqueur or a whiskey flavoured with synthetic or confected notes – but a carefully matured whiskey, accented with real ingredients.

Where are your ingredients from?

We work directly with producers across Ireland. From distilleries and cooperages to mature the finest Irish whiskies with J.J. Corry’s warehouses, to heritage orchards, apiaries and historic bakeries. We look to forge relationships to celebrate expertise that are based on knowledge and harmony, and return to the land – if you’re a producer and are interested in working with us, please get in touch, we'd love to hear from you!

What is the process?

Depending on the ingredient, we look to distil, infuse or reduce them to capture the best of their profile, and to act as an accent to our whiskey blends. Our honey, butter and breads are distilled at low temperature, our heritage apples are pressed and reduced, and our botanicals are steeped in whiskey, or concentrated into our apple honey. We do not add any sugar, and we do not chill filter.

How do i drink it?

Whiskey is about bringing people together, and about more than late at night or after dinner. We like to drink Fierfield neat, on the rocks alongside dinner, served long as an aperitif, or mixed into some amazing cocktails. We’re happy to provide inspiration, but taste the whiskies neat, then work out what is going to suit your mood best.
